It’s 5 o’clock somewhere! Escape to the islands with a holiday cocktail that goes easy on the guilt and your wallet.
Mondays around the holidays are always the worst, because you can think of a million other things you can be doing besides working. The holidays are a great time to catch up with family & friends. Whether you head to happy hour with some co-workers to celebrate the holiday or spend time with family, it usually involve lots of food and A LOT of drinks. The downside is that holiday drinks tend to be extremely sugary and give you a headache the next day. Ditch the fattening drinks and avoid the extra pounds because this cocktail will definitely add some spice to your party making you and your loved ones feeling like it’s Christmas in July!
Coconut Christmas Vacation
Ingredients
1 part rum or mezcal
1 part coconut cream
2 parts almond milk
1 pinch cinnamon
1 pinch chili powder
This is a really easy drink to make. I’ve made this in gallon jugs for parties and it’s fool-proof. There is basically no way of messing this one up. Start with your mixing device of choice (I’m a fan of a metal shaker and a glass), fill it with ice, and pour in two shots of rum (mezcal works really well too because of the smokiness). Adding coconut cream may be a little tricky as the cream may be in more of a solid state depending on the temperature. I’m much more of an “eyeballer” in general, so if it’s more of a solid, a heaping tablespoon should do the trick. If it’s in a liquid state, about 2 shots should do the trick. Add half a cup of almond milk (I use almond milk because I like the nuttiness, but if you want more coconut flavor use coconut milk).
Shake well and serve over ice. Garnish the top with a dash of cinnamon and chili powder for a kick.
